Taco Night: Plant-Based and Delicious!
Taco Cheezy Sauce
(adapted from Happy Herbivore)
- 1 Cup low-fat unsweetened non-dairy milk
- 1/2 Cup nutritional yeast
- 2 Tbsp cornstarch
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- 1/2 Cup salsa
Whisk all ingredients together in medium saucepan and bring to a simmer until it thickens.
Use it in tacos, on rice or other grains or on veggies. Delicious!
Easy Roasted Chickpeas
2 cans low-sodium chickpeas, drained and rinsed
- 2 Tbsp taco seasoning
Preheat oven to 350 degrees. Combine chickpeas and taco seasoning. Lightly spray your cookie sheet with oil. Line chickpeas in one layer and place in oven. Roast for 30 minutes, turning half way through.
