Yummy Banana Pumpkin Granola

Ingredients:

  • 4 Cups of rolled oats
  • 2/3 Cup of chopped walnuts
  • 2/3 Cup of slivered almonds
  • 2/3 Cup of pepitas (pumpkin seeds)
  • 1/3 Cup whole flax seeds1 Cup of golden raisins3 very ripe bananas
  • 1/2 Cup pumpkin puree or applesauce
  • ¼ Cup maple syrup
  • 2 teaspoons cinnamon
  • 2 teaspoons of vanilla
  • 1 teaspoon salt

Method:
Preheat oven to 330 degrees.
Mix the oats, walnuts, almonds, pepitas, flax seeds and raisins together in a large bowl. In a separate bowl, mash the banana well and add the pumpkin puree, maple syrup, vanilla, cinnamon and salt. Add the wet ingredients to the dry ingredients and mix well. Spread the mixture evenly on a large cookie sheet. You may need to cook in more than one batch. Bake for 10-15 minutes, then stir and bake for another 10-15 minutes. Remove from oven and let cool completely. Keep in an airtight container. Enjoy!

Notes: This makes about 8 cups of granola.
